Keith Brown Head Chef at The Vaults is delighted to present his exciting menu’s which blend contemporary European cuisine with traditional British favourites and position the restaurant at the forefront of the cities culinary scene.
Having originally learned his trade under Sean Penn, Keith’s wealth of experience at numerous British and European eateries stands him in perfect stead to share his inspirational approach at The Vaults. Integral to Keith’s style are seasonal dishes with a contemporary, original twist and he cites chef Paul Gayler as a notable influence.
Hailing from the West Midlands region, Keith understands the importance of fresh produce and is delighted to be working with local suppliers to maintain the culinary standards that are now synonymous with The Vaults.
Our personable boutique restaurant is dominated by a huge floral display under feature lighting and seats 64 with views across the bar and galley.
We’re open for dinner from Tuesday to Saturday in the restaurant. We offer a full a la carte menu and a flavoursome set menu for large parties.
